Sausage and Mushroom Stuffing

About the Recipe

Turkey Day stuffing made easy! My family always asks me to make this one!

Ingredients

1 lbs ground pork sausage (we use spicy breakfast sausage like Jimmy Deans)

1 loaf of french bread (12 cups cubed and dried) or use 2 bags of cubed stuffing mix

1/2 cup butter

1 cup of chopped celery

1 cup of chopped onion

2 cups of fresh sliced white or baby bella mushrooms chopped

2 cups chicken broth

1 tbsp salt

1 tsp black pepper

1 tbsp sage

1 tbsp thyme

1/2 tbsp rosemary

2 tbsp dried parsley or 1/4 cup fresh parley chopped


Directions

Cut the bread loaf into 3/4-inch cubes and lay them out so they dry out a little. (This can be done several days ahead, the harder the bread the better the stuffing!)

Preheat oven to 350 degrees

Grease a 9 x 13 casserole dish with non stick cooking spray 

In a skillet, add the butter and pork sausage.  

Break up sausage and cook for 3 to 4 minutes.

Add the onion, celery and cook for 2 minutes

Add in the mushrooms and continue to cook until sausage is browned through and mushrooms are soft

Stir in fresh parsley if using

Remove from heat

In a separate saucepan, warm the chicken broth

Add in the remaining seasonings and stir to combine

Remove from heat

Combine the sausage mixture and the chicken broth in a large bowl

Stir to combine

Add in the cubed bread, making sure each piece is coated with broth mixture

Spoon into the greased casserole dish

Bake for 30 minutes or until heated through
