About the Recipe
This yummy mexican rice side dish can be made easily in your rice cooker or Instant Pot
Ingredients
1 cup long grain rice washed and rinsed
2 1/2 cups chicken broth
3 oz tomato paste (1/2 of a 6 oz can)
2 tbsp butter
1/2 cup of finely diced onions
1 clove of garlic finely minced
1/2 finely diced jalepeno (opptional)
1 can green chopped green chillies (4 oz)
1 tsp black pepper
1 tsp red pepper flakes
1 tsp kosher salt
Cilantro for garnish
Directions
Put all of the above ingredients except cilantro in the rice cooker
Give it a good stir
Cook according to manufacturer instructions for cooking rice
Let sit for 5 minutes once cooking is complete
Fluff with fork, add chopped cilantro for garnish
