About the Recipe

My family loves this recipe from Neli Howard (Delicious Meets Healthy) It is a quick and easy soup perfect for anytime but especially those cold wintery nights! We like to use leftover ham from the holiday dinners.

Ingredients

2 tbsp butter

1/2 cup carrots peeled and diced

1 medium onion chopped

3 cloves of garlic minced

2 stalks of celery chopped

1 lb cooked ham cubed

2 lbs potatoes cut into 3/4 in cubes (we like gold but you can use russet too)

32 oz vegetable stock

1/4 cup heavy cream (can also use milk or coconut cream)

salt and pepper to taste

1 tsp thyme


Directions

Press the saute button on Instant Pot

Add the butter and chopped veggies to the pot

Cook stirring occasionally until veggies are soft about 5 minutes)

Turn off the saute function

Add the remaining ingredients to the pot

Close a lock the lid and ensure valve is set to "seal"

Cook on high pressure for 12 minutes

When the high pressure cooking is complete press the cancel button

Turn the valve to venting and quick release all pressure

Open the lid, give it a good stir and serve!
