Lemon Bundt Cake

About the Recipe

Most requested cake in my family - hands down. This is my Mom's recipe and I have made it many times and everyone always asks for the recipe. A little sweet, a little tart, its a perfect lemon cake and super easy to make!

Ingredients

Cake:
1 box lemon cake mix (add 2 tbsp flour if hi altitude)
1 box lemon instant pudding mix
1 cup of water
4 eggs at room temperature (yes 4 eggs)
2/3 cup canola oil
Glaze:
1/4 cup sugar
3 tbsp fresh lemon juice

Directions

Preheat oven to 300 degrees

To make cake:
Grease and flour cake pan - I use a decorative bundt pan
Mix all ingredients for the cake with a hand mixer for 2 to 3 minutes until smooth
Pour into bundt pan and bake for 60 minutes. Note: I start checking with toothpick at 50 minutes. When toothpick comes out clean, remove cake from oven
Allow cake to cook completely before removing from bundt pan
Transfer to large plate/platter

To make glaze:
Combine sugar and lemon juice in small sauce pan
Heat until mixture turns clear - about 3 to 4 minutes
Slowly pour over cake making sure to coat sides and middle
Allow to cool completely
